THE RANGE

Supplied directly from ARTISAN MILLS and OLIVE GROWERS in many MEDITERRANEAN TERROIRS, all our olive oils are grouped within a range which includes 3 LEVELS: SELECTION, TRADITION, SIGNED HARVEST.

SELECTION

The SELECTION range includes BLENDS of olive oils from one or more origins, in any case from different terroirs, but always from selected artisanal productions. This practice, which requires real know-how, makes it possible to obtain products with unique organoleptic characteristics. The entire process is designed and carried out under the quality control of our Workshop in Aix-en-Provence.

In this range we indicate the following elements: CULTIVAR(s)

TRADITION

The TRADITION range includes olive oils produced exclusively by MILLING OPERATORS, cooperative or private.

Emblematic of olive oil production structures throughout the Mediterranean basin, these farms operate on the principle of crushing, in a "common batch", the harvests brought by several regional olive growers. These olive oils, called "mill oils", perfectly reflect the characteristic flavors of a terroir through all the know-how of the MASTER MILL who developed them.

In this range we indicate the following elements: MILL, CULTIVAR(s), ORIGIN.

SIGNED HARVEST

The RECOLTE SIGNEE range includes olive oils exclusively produced by OLIVE GROWERS and OLIVE ESTATES.

Symptomatic of the attachment of each person to their olive grove, these productions are exclusively obtained from fruits harvested on a single farm and most of the time on a single orchard. Crushed directly on site by the farmer or resulting from a "custom" crushing with a Master Millier, these olive oils reveal more particularly all the cultural care given to the orchard before the harvest in order to obtain olive oils of excellence.

In this range we indicate the following elements: DOMAIN / OLIVE PLANT, CULTIVAR(s), ORIGIN.

THE VARIABLES

Whatever the RANGE level, certain olive oils have SPECIAL CHARACTERISTICS:

organic

Olive oils from organic farming, certified by an approved body of the European Union.

MONOVARIETAL

Olive oils produced by crushing a single variety of olives.

AOP

Olive oils from a region classified as a Protected Designation of Origin, recognized by the European Union.
